BLACK CHERRY BBQ MEATLOAF MUFFINS

No dry meatloaf here! Just juicy, filling, flavorful meatloaf bites and creamy mashed potatoes. Wow your guests and your family next time you gather around the dinner table with this Black Cherry BBQ goodness.

Ingredients

    • An 8oz bottle of Elda’s Kitchen Black Cherry BBQ Cooking & Grilling Sauce
    • 1 pound of ground beef
    • 1 pound of ground pork
    • 1 small yellow onion, diced
    • ½ tablespoon of Italian parsley, chopped
    • ½ teaspoon chili powder
    • 1 teaspoon garlic powder
    • A few pinches black pepper, freshly cracked
    • ½ to 1 cup bread crumbs
    • 2 teaspoons – 1 tablespoon of salt
    • 1 egg

Optional Mashed Potatoes

    • 4 large russet potatoes, peeled and cut into chunks
    • 1 stick of butter
    • ½ cup of heavy whipping cream
    • Salt

Directions
For the mashed potatoes 

In a large pot, boil your potatoes until fork-tender. Drain potatoes and transfer to a large mixing bowl. Add one stick of butter to the potatoes. Using a hand mixer on medium speed, mash the potatoes and incorporate the butter. Mix for a shorter amount of time if you like your mashed potatoes chunkier.

Once the butter has been incorporated, add in ½ cup of heavy whipping cream and several pinches of salt. Continue mixing, until the cream has blended into the potatoes. Season with salt to taste as you mix.

For the meatloaf muffins
Preheat your oven to 375 degrees Fahrenheit. Grease a muffin tin and set aside.

In a medium bowl, combine beef, pork, onion, parsley, chili powder, garlic powder, pepper, ½ cup of bread crumbs, salt, egg, and ½ bottle of Elda’s Kitchen Black Cherry BBQ Cooking & Grilling Sauce (be sure to save some to top the muffins with after they bake).

Using your hands, mix together all of your ingredients to combine. Continue to add breadcrumbs until the consistency is sticky, but not watery.

Using a medium ice cream scoop, fill your muffin tin with meatloaf mix! This will make about 6 meatloaf muffins.

Bake in oven for about 30 minutes. Remove from the oven and drizzle the rest of your Black Cherry BBQ sauce. Return to the oven for a few more minutes, ensuring that the internal temperature reaches approximately 160 degrees.

Remove from the oven, let cool, serve up with your potatoes and Enjoy!
