GARLIC AND HERB FRENCH POTATO SALAD

Light and fresh, this simple homemade garlic and herb French potato salad is sure to elevate and accent any dish it accompanies.   

 

Ingredients

3 lbs small fingerling potatoes, chopped

1 large garlic clove, finely minced

2 shallots, diced

2/3 cup white wine vinegar

1 tablespoon Elda’s Kitchen Garlic and Herb Cooking & Grilling Sauce

 3 tablespoons olive oil

Dash of cracked black pepper

2 teaspoons of flaked sea salt

1/2 cup fresh parsley, finely chopped

2 tablespoons capers

Directions

Chop and boil 3 lbs small fingerling potatoes until just soft, but still snappy. You want to avoid mushiness with this recipe. Drain well and set aside.

In a large bowl, combine shallots, garlic, white wine vinegar, olive oil, and Elda’s Kitchen Garlic and Herb Cooking & Grilling Sauce. Sprinkle with fresh cracked black pepper and flaked sea salt. Mix well. 

Add potatoes to the mixture and gently mix with a spoon to coat with the seasonings. Once mixed, add fresh parsley and gently mix again to make sure the parsley is evenly distributed throughout. Drizzle a little more olive oil over everything and mix a bit more.

Add capers and mix again. You can add a little more Garlic and Herb sauce or simply Enjoy!
