GREEN HATCH CHILI SCRAMBLE

Hearty, filling, with just the right amount of spice, this recipe for Green Hatch Chili Scramble is an easy and delicious lunch or dinner. This recipe is for a single dinner portion, but you can easily double, triple, or quadruple the recipe to serve more.
Ingredients
- 1 cup of Elda’s Kitchen Green Hatch Chili Cooking & Grilling Sauce
- ½ red bell pepper, diced
- ½ green bell pepper, diced
- ¼ cup cherry tomatoes, halved
- 4 eggs, mixed
- 2 small tortillas, fried and chopped
- Chorizo, ground
Toppings
- 1 cup of Elda’s Kitchen Green Hatch Chili Cooking & Grilling Sauce
- 1 jalapeno, thinly sliced
- 1 avocado, sliced
- Cilantro, roughly chopped
- Cheese of your choice, grated (a hard cheese works really well texturally)

Directions
Coat a skillet with oil, heat over medium heat, and fry your tortillas until crisp. In the same skillet add chorizo and heat through. Once heated, add your bell peppers and stir to coat. Then add 1 cup of Elda’s Kitchen Green Hatch Chili Cooking & Grilling Sauce. Once tortillas have cooled, chop them into squares.
Once the sauce, chorizo, and peppers are heated and bubbling, add eggs and chopped tortillas. Mix well. Cook over medium-high heat so flavors combine. Once it has simmered for a few minutes, add your tomatoes and stir. Let cook for a minute or two, then remove from heat.
