HOLIDAY LEFTOVER MAKEOVER

Leftovers don’t have to be a letdown! With this recipe, you can elevate your holiday leftovers into a whole new dish! These loaded leftover sandwiches are gourmet and full of holiday flavors. You can add your favorite Elda’s Kitchen sauce in place of cranberry sauce. Some of our favorites to pair with leftovers are Spyki, Black Cherry BBQ, Garlic & Herb, and Kentucky Bourbon.

Ingredients 

 

  • An 8oz bottle of your favorite Elda’s Kitchen Cooking & Grilling Sauce or cranberry sauce
  • Leftover meat
  • Leftover stuffing
  • 1 loaf of sourdough bread
  • Mashed potatoes (warm up in microwave or oven ahead of time)
  • 1 wedge of brie cheese

Directions

In a large skillet over medium-high heat, spray heavily with cooking spray. Then melt 1 tablespoon of butter

While butter is melting, spray mini-waffle with non-stick cooking spray (if you don’t have a mini-waffle iron, you can also fry in a pan) Fill waffle-iron with stuffing and press closed. Let cook until crispy.Use tongs to remove as soon as it is crisp.

Once your butter has melted, place sourdough on the skillet (we can usually cook 2 sandwiches at a time in our skillet). While one side of the bread is frying, slice your brie cheese into thin slices and lay slices ontop of the bread. Ontop of your brie, add your leftover meat. Load up with mashed potatoes and top with cranberry sauce.Place one more piece of bread on top and carefully flip the entire sandwich. Add a little butter underneath the bread. After a moment, you can add some of your crispy stuffing to the inside of the sandwich.

If you like, you can spread butter over your sandwiches and flip them twice to crisp the bread and melt the cheese. Once both sides are crisp and the cheese inside has been heated all the way through, remove from heat, let cool for a moment and enjoy!
