BRIE’S HOMEMADE PRETZEL BITES

Ingredients

Pretzel Bite Dough

1/2 ounce active dry yeast
1/2 cup and 1 tablespoon sugar
1  3/4 cups warm water (105 degrees)
5 cups flour
1/2 cup granulated sugar
1 tablespoon vegetable oil
1/4 cup baking soda
Kosher salt

Bite Size Nachos

Directions

Preheat oven to 425 degrees. 

Mix yeast, 1 tablespoon of sugar, and room temperature water in a small bowl.  Cover with plastic wrap and let sit until yeast blooms.

Once yeast mix blooms, add flour, sugar, and vegetable oil into a large mixing bowl.  Add the yeast contents to the flour mix.  Mix on medium high speed using the dough hook attachment until well blended.  Form dough into thumb-size pieces and place on wax paper.

Fill a large saucepan with 4 cups of water.  Bring to rapid boil.  Add baking soda and boil for one minute.  Carefully drop pretzel bites into boiling water.  Boil each bite for one minute, then transfer onto prepared baking sheet (parchment paper or nonstick spray).  Sprinkle Kosher salt over top of bites.  Bake for 8 minutes or until light golden brown.  Remove from heat.

While pretzel bites are baking, prepare one or all of the dipping sauces below:

Cheese Dipping Sauce

4 tablespoons butter
4 tablespoons flour
2 1/2 cups milk
4 ounces cheddar cheese, cut into cubes
1 8 ounce block cream cheese
Kosher salt
4 tablespoons Elda’s Kitchen Green Hatch Chili Cooking and Grilling Sauce

Melt butter in large saucepan over medium heat.  Add flour and stir.  Add milk and stir until sauce thickens.  Add cheddar cheese and cream cheese and continue to stir over medium heat until cheese is melted and sauce is smooth.  Add Elda’s Green Hatch Chili Sauce and a pinch of Kosher salt.  Blend well.  While warm, pour into individual serving bowls and serve with pretzel bites.

Mustard Dipping Sauce

1/8 cup yellow mustard
1/8 cup spicy brown mustard
2 tablespoons Elda’s Kitchen Jamaican Jerk Cooking and Grilling Sauce 

Mix all ingredients together and pour into individual serving bowls.  Serve with pretzel bites.

Peanut Butter Dipping Sauce

3 tablespoons creamy peanut butter
2 tablespoons Elda’s Kitchen Honey Ginger & Soy Cooking and Grilling Sauce

Melt peanut butter in microwave safe bowl for 15 seconds to soften.  Add Elda’s Honey, Ginger & Soy Sauce and mix well.  Serve with pretzel bites.
