Brie’s Lamb Lollipops

Ingredients

6 lamb lollipops
2 to 3 lemons
honey
2 to 3 tablespoons vegetable oil

Marinade:

1 8 ounce bottle Elda’s Kitchen Garlic & Herb Cooking and Grilling Sauce
fresh rosemary sprigs
fresh mint
juice from 1 lemon
2 tablespoons honey


Bite Size Nachos

Directions

Prepare marinade by mixing together: rosemary, mint, lemon juice, honey and Elda’s Kitchen Garlic & Herb Sauce.  Place lamb lollipops into a container.  Pour marinade mixture over lollipops and refrigerate for 4 hours.

Remove lollipops from refrigerator and let sit until lollipops are at room temperature.

Add just enough vegetable oil to coat a large frying pan.  Heat oil until hot.   Carefully place lollipops into the frying pan.  Fry lollipops for 3 to 4 minutes, then flip each lollipop and cook for an additional 3 to 4 minutes.  Lollipops should be a light golden brown on each side.  Turn lollipops on their side to brown the edges, watching to make sure they don’t burn.  Sprinkle fresh lemon juice on top of lollipops.

Remove lollipops from the oil and place on a serving platter.  Accent with a small bowl of honey and fresh lemon wedges.  Enjoy!
