BRIE’S PIMENTO CHEESE SANDWICH WITH MINT JULEP DRINK

Ingredients
Pimento Cheese Sandwich
1 8 ounce block cream cheese
1 1/4 cup cheddar cheese, shredded
1/2 cup mayonnaise
1 4 ounce jar diced pimentos (do not drain)
2 teaspoons garlic powder
Pinch Kosher salt
Few twists freshly cracked black pepper
1 bottle Elda’s Kitchen Hot Wing Cooking & Grilling Sauce
8 slices bread
1 bag pork rinds (optional)
Mint Julep Drink
1 1/4 cup granulated sugar
1 cup water
1 12 ounce frozen concentrate lemonade
1 cup non-alcoholic creme de menthe syrup
1 large bottle club soda
Fresh mint leaves
Ice cubes
2 ounces bourbon (optional – per beverage, 21 years old and older)**

Directions
Pimento Cheese Sandwich
In a large bowl, stir together cream cheese, mayonnaise, salt, pepper and garlic powder. Add shredded cheese, pimentos including liquid and Elda’s Kitchen Hot Wing Sauce. Blend well.
Spread cheese mix onto slices of bread. Top with additional slices of bread to make sandwiches. Carefully cut off crust from sandwiches. Cut each sandwich in half, forming two triangles. Spoon cheese mixture into a small individual serving bowl. Drizzle Elda’s Kitchen Hot Wing Sauce over cheese. Place two triangle sandwich pieces, bowl with cheese and a handful of pork rinds onto individual serving plates. Makes 4 servings.
Mint Julep
In a saucepan over medium heat, blend together sugar and water to make a simple syrup. Remove from heat and let cool for a few minutes. Add lemonade concentrate and stir until concentrate is melted. Add creme de menthe – blend well.
Place ice cubes into highball glasses. Pour club soda into glasses 2/3rds way up. Top with lemonade mix and stir. Add a sprig of mint and serve with Brie’s Pimento Cheese Sandwiches.
**If adding bourbon to the drink, fill glass 1/2 way full with club soda, then add bourbon and top with lemonade mix. Stir and top with sprig of mint.
