SUMMER SALAD BOWLS

Beat the heat with these crisp, refreshing, delicious summer salad bowls! Mix and match your favorite ingredients and try new dressing combinations to keep things fresh and flavorful all summer long. In this recipe, we build two different example salads using some of the ingredients below.

Ingredients

Greens

  • A bag of arugula
  • Butter lettuce, torn into bite-sized pieces
  • A bag of romaine, torn into bite-sized pieces

Proteins

  • Tri-tip, pre-cooked
  • Chicken, pre-cooked
  • Garbanzo beans
  • Dark red kidney beans

Dressings

Meat Marinades

Cheese

  • Feta crumbles
  • Bleu cheese crumbles

Vegetables

  • Cucumber, cubed
  • Cherry tomatoes, diced
  • Sweet yellow peppers, sliced
  • Fruit
  • Dried cranberries
  • Pickled beets, sliced

Extras

  • White mushrooms, sliced
  • Black olives, sliced
  • Croutons
  • Wonton strips
  • Santa Fe tortialla strips
  • Pecans
  • Sunflower seeds, shelled
  • Bacon bits

Directions

For The Tri-Tip Bowl

This salad is a gourmet meal all on its own! We made this one with adults in mind, but adventurous kids may love it too!

For this recipe, we pre-cooked our tri-tip. To do this, we marinated the meat in Elda’s Kitchen Kentucky Bourbon Sauce and grilled it up to our preference.

In a large bowl, gently mix your arugula, butter lettuce, and romaine. Then add the following ingredients to the greens:

  • ⅓ cup mushrooms
  • ¼ cup garbanzo beans
  • ½ cup tomatoes
  • ¼ cup sweet yellow peppers
  • A few pinches of cranberries
  • A few pinches of bacon bits
  • ½ cup of kidney beans
  • ½ cup of pickled beets

Top everything with ¼ bottle of That’s Mine Organic Cherry Balsamic Dressing. Using two wooden spoons, gently mix everything to combine.

Time to plate your salad! Take a medium or  large bowl and serve up as much salad as you’d like! Next, add several pieces of tri-tip across the top of your salad. Then, sprinkled with pecans, bleu cheese crumbles, and croutons. Drizzle with a little more That’s Mine Organic Cherry Balsamic and enjoy!

For The Chicken Salad Bowl

We made this bowl with kids in mind! Even pickier eaters will enjoy this fresh, colorful salad.

For this recipe, we marinated some non-breaded chicken tenders in an 8 oz bottle of That’s Mine Organic Italian Dressing and baked them in the oven until cooked through.

In a large bowl, gently mix your greens together. Then add the following ingredients: 

  • ½ cup cucumber
  • ½ cup tomatoes
  • ⅓ cup red kidney beans
  • ¼ cup yellow peppers
  • ⅓ cup olives
  • ½ cup sunflowers seeds

Top everything with ¼ bottle of That’s Mine Organic Ranch Dressing. Using two wooden spoons, gently mix everything to combine.

Time to serve up! Take a large or medium bowl and serve as much salad as you’d like. Next, top with some of your chicken tenders. Finally, add some tortilla strips, drizzle a little more That’s Mine Organic Ranch Dressing and enjoy!
