GINGER TERIYAKI TOFU AND BROCCOLI

This recipe for ginger teriyaki tofu and broccoli is a must for vegetarians who love bold flavors!
Ingredients
- Your favorite long grain rice
- 1 block of tofu, cubed
- An 8 oz bottle of Elda’s Kitchen Ginger Teriyaki Cooking & Grilling Sauce.
- 1 cup fresh broccoli florets (can use frozen, it just needs to be thawed prior to cooking)
Optional toppings
- Sesame seeds
- Red peppers, sliced
- Red pepper flakes
- Scallions
- 1/2 onion, sliced

Directions
In a large mixing bowl, combine cubed tofu and an 8oz bottle of Elda’s Kitchen Ginger Teriyaki. Gently turn with a spoon to coat tofu in sauce. Let marinate for at least 1 hour. While marinating, prepare your rice to package specifications.
After marinating, place large-medium skillet on stove over medium heat. Once the pan is warm, add tofu and all of the marinade from the bowl. With a wooden spoon, gently spread tofu so it covers the pan. Cook until tofu begins to firm, turning to cook on all sides. If adding peppers or onions, now is a good time to add them. Cook until onion and pepper become a little tender. Add broccoli and cover. Let cook for a few minutes. Add one cup of water and cover again. Once water boils, remove lid and stir. Once most of the water has cooked down/thickened, pour over your rice. You can add additional Ginger Teriyaki if needed and Enjoy!
