- 2 bread slices (we used sliced brioche)
- 4 cheese slices (we used American
- ยผ cup shredded Swiss cheese)
- 4 tbsp butter
- Jalapeรฑo slices

Lay bacon in a shallow baking dish and pour over 1/2 bottle Eldaโs Kitchen Honey, Ginger & Sauce. Baste each side of the bacon. Let sit for 20 mins or up to 4 hrs.
While the bacon rests, preheat the oven to 300ยบ F. Line a baking sheet with foil, place a baking rack on top, and thoroughly spray the rack with cooking spray.
Remove marinated bacon from baking dish and lay on the rack. Sprinkle with brown sugar.
Bake in oven for 45 mins at 300ยบ F. If bacon isnโt quite cooked to your liking, turn heat up to 350ยบ F and cook for an additional 15 minutes, monitoring closely. Turn broiler to high and watch for a couple of minutes until the bacon starts to bubble, then remove from oven. Set aside.

Heat a nonstick skillet on medium-high heat and melt 1 tbsp of butter. Butter one side of each slice of bread and build the sandwich: 2 slices of American cheese, a handful of fresh shredded Swiss, 3 half slices of bacon, a little more Swiss cheese, 3 more half slices of bacon, another handful of Swiss cheese, and 2 more slices of American then top with the other bread slice, butter-side up.
Add to the hot, buttered skillet and cook for a few mins. Flip and cook until cheese is melting and bottom is a crisp golden brown. Add 1 more tbsp of butter to the pan and flip the sandwich one last time. Cook until cheese is melted and both sides of the bread are a crisp golden brown.
