- 2 portobello mushroom caps, cleaned
- 3 tbsp olive oil
- 2 tbsp soy sauce
- Salt and pepper to taste
- 2 slices Swiss cheese
- Β½ cup fresh baby spinach
- 1 tomato, sliced
- 2 hamburger buns
- Brieβs Drive-In Burger Sauce
ππ’π«ππππ’π¨π§π¬:
Drizzle 1 tbsp olive oil and 1 tbsp soy sauce onto a small plate. Absorb the mixture by rubbing both sides of the mushroom cap over it. Sprinkle with salt and pepper to taste. Repeat with second cap.Β
In a pan over medium-high heat, warm 1 tbsp of olive oil. Add mushroom caps, top side down and cook for about 5 mins per side until tender.
Top each cap with a slice of Swiss cheese, pour 2 tbsp of water in the pan, and cover. Allow the steam to melt the cheese for 1-2 mins, then remove from pan.Β
Add to hamburger buns and top with baby spinach, tomato slice, and a generous helping of Brieβs Drive-In Burger Sauce.Β
